Release download

I've read often about new releases such as 11.1 and 11.3. From where do I download these versions? I usually use the Steam Beta function.

Steam will update your game when a new release is available for you.
All published versions are not available on steam, only the stable ones are. that's why you "miss" 0.11.1 and 0.11.2 as they where both alpha/beta and are only available for patreons users.

I think you have to turn off the Beta option in Steam then the new version will download automatically when you start the game.

Correct. Only Patreon gets direct and timely access to versions other than the announced versions release on Steam. Steam always and only gets the final release in an update cycle (which contains its own changes in addition to all changes added in Patreon test versions).

Unless instructed, no Steam user should be using a testing or beta branch other than the numbered ones that allow rolling back to previous game versions, as a) there's no benefit, and b) it puts them at risk of Steam update issues, outdated versions, etc. etc.
