Is there any way to edit the models of characters? I want to create custom ones. Thanks!

Short answer: Nope.
Only bodychange command in game can do that.
Long answer:
If you really really really want to do that, uncompress unity3d resources asset, do some magics, and recompress the resources assets.
Don't complain about clothes or position issue afterward
